We present a simplified take on a drink from our latest cocktail list. It's a batch pre-mixed that's loaded full of essence of a holiday season, making it excellent for hosting a celebration. Reserve the remaining citrus syrup to use in brunch beverages, puddings, or to make additional servings of bikinis.

The Bikini Cocktail

Serves 10 people

For the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Drink (makes 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

For the Citrus Syrup: Combine all the ingredients in a saucepan, bring to a light boil, mixing to dissolve. Next, remove from the burner and leave to cool completely. Transfer to a clean bottle, cap it and refrigerate it in the refrigerator, where it will keep for around a month.

To make Batch Mix: Combine all the liquids into a big jug, leave to sit for one hour, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.

For serving: Add 85ml of your premix to a mixing glass filled with ice, gently stirring gently for about 60 seconds to cool it down. Strain to a frosted cocktail glass or equivalent, top with some cranberries and complete it with a quick spritz with the mandarin essence over the top.
